3. Able to work 5.5 days per week
4. Minimum 2 Years Experience for Sous-Chef in Thai Kitchen in any 5-Star-Hotel.
5. Experience in Fine Dining Restaurant is preferable.
1. Assist Executive Chef in establishing and maintaining the highest standard of service and generate profits in accordance with the establishment budget within the kitchen and other areas as designated by the Management.
2. Maintain close control over store supply ensuring that adequate quantities of food items are at hand at all times
3. Ensure the recipes and costings are established and updated
4. Assist the Executive Chef with menu preparation and seasonal food concept changes
5. Plan and attend pre-meal briefing sessions
6. Inspect food stores and implement proper storage to avoid waste
7. Help to execute well constructed promotions and functions
8. Supervise and administer the entire kitchen operation to ensure correct procedures are adhered to daily food preparation
9. Monitor the quality of the food and strive for high productivity by the management
10. Develop attractive menus and create standard recipe cards with pictures according to the policy
11. Inspect storerooms, refrigerators and freezers daily to ensure no wastage
12. Make sure standard recipes are used, and food is presented according to pictures
